Gotcha pork roast

Ryan requested me to make one of his anime food from Shokugeki no Soma (Food Wars) which is gotcha pork roast. 
Quite easy to make with ingredients like boiled potatoes, sautéed onions and mushrooms with butter. Mixed all the ingredients and wrap it with bacon. Tie it with twine and insert some fresh rosemary herbs on the bundle. Bake it at 180C for about 40 mins. For the sauce boiled some red wine with butter. I altered the original recipe by adding some garlic powder and oregano to the potato mixture.

Capsicum rice with grilled spiced chicken

I made this Capsicum rice based on the recipe by Hebar's Kitchen. Recipe as follows:

INGREDIENTS

FOR MASALA POWDER:

  • 2 tbsp peanuts / groundnuts
  • ½ tsp chana dal
  • ½ tsp urad dal
  • 1 tsp coriander seeds
  • ½ tsp cumin seeds / jeera
  • 1 tsp sesame seeds / til
  • 4-5 dried kashmiri red chili

OTHER INGREDIENTS:

  • 2 tbsp oil / ghee
  • 1 tsp mustard seeds / rai
  • few curry leaves / kadi patta
  • 1 medium sized onionthinly sliced
  • 1 cup capsicumgreen, yellow, red, thinly sliced
  • ½ tsp turmeric / haldi
  • ½ tsp garam masala
  • salt to taste
  • 2 cups cooked basmati rice / leftover rice
  • 2 tbsp coriander leavesfinely chopped

INSTRUCTIONS

  • firstly, in a thick bottomed pan dry roast peanuts till the skin separates.
  • further add chana dal, urad dal, coriander seeds, cumin seeds, sesame seeds and red chili.
  • dry roast on low flame till the spices turn aromatic.
  • cool down the spices completely and coarsely powder them. keep aside.
  • in a large kadai heat oil or ghee.
  • further add mustard seeds and curry leaves.
  • saute slightly and allow to splutter.
  • additionally, add onions and saute till they turn slightly golden brown.
  • also saute capsicum.
  • furthermore add turmeric, garam masala, prepared masala powder and salt.
  • saute for a minute or till the spice powder turn aromatic.
  • now add cooked basmati rice or leftover rice.
  • mix gently without breaking rice grains.
  • cover and simmer for 5 minutes or till the rice absorbs the masala.
  • further add coriander leaves and serve.
  • finally, serve capsicum masala rice garnished with few onion slices, lemon and coriander leaves.
    As for the grilled spiced chicken, I used chicken breast marinated with onion powder, garlic powder, cayenne pepper, paprika, ground cumin and coriander, salt and black pepper.

Kiam Chai (Salted veg) N Kiam ark nui (salted duck egg)

My mum is quite good at fermenting food. 2 of the household favourites are kiam chai and kiam ark nui.

Recipe for kiam chai:
Sun dry the fresh mustard bought for a day then rub salt evenly before putting them in a container.  Add the first washed rice water to the container. For added taste, place pineapple skin or core and ferment for 2 to 3 days.

Recipe for kiam ark nui:
for ten eggs, boil a cup of salt with 3 cups of water, our eggs in container and pour cooled salt solution into the container. About a week before the eggs are ready, put some charcoal ash into the container for a creamer egg yolk texture. Eggs should ferment at least 28 days, but can leave for longer.

Zucchini quiche

Back to making quiches again. It's zucchini quiche, simple and tasty. Ingredients are zucchini, yellow onion, bacon, oregano, basil, garlic powder, salt and pepper. For the mixture, 

I used 3 eggs and some cooking cream. Cut some tomatoes for garnish on top of the quiche, and sprinkle some paprika. 

As for the pastry, my measurement is 210gm flour, 105gm butter with an egg. Mixed into a dough and rest for 1 hour before rolling into a 25cm tart pan. Blind bake the shell at 200 C for about 15 mins   before adding ingredients to bake the quiche with same temperature about 20-25 mins.

Cumin rice with grilled spiced chicken

I really like this cumin rice from Hebbars kitchen, easy to prepare and very delicious. Heat some butter and put cumin seeds, stir fry till u get the aroma then put in the soaked basmati rice, stir for 2-3 minutes then put in the cooker to cook. Don't forget to season with salt. When its cooked, add some fried shallots and fresh coriander, Hociak!
 For the chicken, I marinate it with salt, garlic powder, onion powder, cumin powder, coriander powder, chili powder, garam masala and some sugar. Add some oil to marinate.

Ma's Chang (Dumpling)

My mum made dumplings early this year, we were very lucky to savour her delicious dumplings! Recipe: Marinate pork with 5 spice powder, salt, soy sauce, a bit dark soy sauce and more pepper. Fried shallots is a must and some pork lard oil. Boil the beans and put mushroom last in the meat when its almost done, add some sugar to taste. Wrap dumplings and boil for 4-5 hours.
