Nasi Pulao and grilled spiced chicken

I followed one of my favourite blogger (Norazlita Aziz)  on this nasi pulao which is very tasty indeed. For protein I grilled some chicken with spices (marinated with garlic, ginger, cumin, coriander, turmeric, yogurt).

Spicy sausage with kale pasta

I love kale and its one of the superfood, made this special shape pasta (creste digallo no.49) with spicy sausage for the boys today. Just added some chopped garlic, onion and pesto.

Curry Udon

The boys love Japanese curry. This time I tried it with udon noodles. I followed the recipe by Chef Masa, who is a Japanese chef residing in Taiwan. Basically I used some grated garlic & ginger as the base. Then added some potatoes, carrots and onion not forgetting the protein, chicken. I marinated the chicken with some local curry powder and salt. Lastly I used some tomato paste and Japanese curry cubes for flavour.

Fettuccini with courgette

This is Jamie Oliver's 5 ingredients recipe, but the boys wanted some solid protein so I added some bacon to it. Basically it uses mint, courgette, lemon, parmesan cheese and pasta. Taste refreshing with the mint, a simple and tasty dish indeed!

Egg Benedict

I'm a fan of poached egg, since its school holiday I made myself a nice breakfast. I followed nigella's trick to squeezed some lemon juice into a bowl of cracked egg before putting it into the hot water. It works!

Roast stuffed tomato

Tried these roasted stuffed tomatoes I saw on one Korean cooking show. I did not add any kimchi as per the recipe. I seasoned my ground pork with cumin, coriander, onion powder, garlic powder, cayenne pepper and worcestershire sauce. 
Added some onions to stir fry the pork and leave it to cool before adding cheddar and parmesan cheese. 
Stuffed the meat into cut tomatoes, bake half way covered then uncover and add mozzarella cheese, continue baking till cheese melted. Served with some cute animal pasta.

Bibimbap

Jaden requested for bibimbap. a tedious meal to prepare but result is satisfying. I substituted beansprout with pea sprout and opted out some traditional ingredients. This time I followed recipe from Judy Joo @ cookingchanneltv.com I used shimeiji and dried shiitake mushrooms, yellow and green zucchini, carrot, baby spinach, pea sprout, kimchi and sunny side eggs. 
Bibimbap Sauce:
  • 3 tablespoons gochujang
  • 2 1/2 tablespoons mirin
  • 2 teaspoons sesame seeds
  • 2 teaspoons sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon thinly sliced scallions or spring onions
  • Toppings:
    • 3 tablespoons soy sauce
    • 2 tablespoons mirin, plus extra for deglazing pan as needed
    • 1 tablespoon sesame oil
    • 2 cloves garlic, grated
    • 1 teaspoon grated ginger
    • 1 teaspoon crushed roasted sesame seeds
    • 3 tablespoons vegetable oil
Just follow the sauce and use the topping sauce to stir fry each and every vegetable and your preferred meat ( I used chicken).

Saturday breakfast special

I was again inspired by one of Jamie Oliver's 5 ingredients series, he made roasted tomatoes with portobello mushroom, sage and cheese. Indeed it was very easy to prepare and flavourful. I served it with my luncheon meat and potato patty with sunny side egg.

Salmon teriyaki bento

The boys love salmon, I made teriyaki salmon with rice, scrambled eggs and green peas as side. Top with some freshly cut cucumbers.
