Pasta with roasted tomato pesto

This recipe is from "Good chef bad chef", simple and tasty. Roast cherry tomatoes, chilies, garlic with olive oil, salt and pepper. Blend roasted tomatoes with fresh basil, cashew nuts and parmesan cheese. Mix pesto with pasta.

Okonomiyakifu Gohan Oyaki

Today's special is Okonomiyakifu Gohan oyaki. Its actually "Japanese pizza" but it uses rice as its base. I followed youtuber Masa's recipe. Simple and tasty. Add rice, chopped cabbage, spring onions, eggs and Sakura ebi. Mixed and pan fried. Add sauce... delish!

Pasta with tuna and zucchini bake

Jaden and I made pasta with tuna and zucchini bake today. Diced zucchini, carrots and onions. Chopped some garlic and bird's eye chilies for heat. Spring onions and cilantro as garnish. Stir fry onions, garlic, chilies with carrot and zucchini. Salt and pepper for taste. Add dill and lime zest for added fragrance. Juice the lime when you mix the pasta and veg. Make béchamel sauce to combine all ingredients.

Fish and Chips

Boys had fish and chips today. I followed Recipe30's recipe, simple and tasty. Of course can't beat the best fish and chips we tasted in Norwich last year.... Grosvenor's! I know my chips doesn't look appetising, I baked them for a healthier version.

Cheesy Lasagne spinach & basil

I followed chef Joel Mielle of Recipe30.com for this cheesy lasagne spinach & basil. As the chef uses fresh lasagne sheet, he was able to roll the sheet as per his recipe. Mine was instant lasagne, so I just stack them up like normal lasagne. Boys' love them as it was creamy and cheesy.

Crispy chicken with Japanese curry

Boys love Japanese curry. We made them with crispy fried chicken today. Marinate chicken with soy sauce, sake and grated ginger for at least 15 minutes. Coat marinated chicken with some flour before shallow frying them. We made the curry with store bought curry cubes, very easy and delicious.

Takoyaki

I've done takoyaki before but this time it's Jaden who wants to learn how to do it. I cheated as I don't have octopus, I used fake crab roll. Instead of putting the batter first followed by the vegetables, I mixed everything together. 
My recipe for a cheat's takoyaki : plain flour, some rice flour, an egg, Japanese anchovies seasoning, spring onions, cabbage and some water. Garnish with some salmon flakes, Japanese mayo, takoyaki sauce and some aonori(dried green seaweed). Makes 12 balls.

Spaghetti and baked meat balls

Today the boys had spaghetti and baked meat balls. I like making meatballs in big batches and freeze the leftover for emergencies. This time I followed the meatball recipes from good chef bad chef, a cooking program shown on AFC. Ingredients as follows:

Minced meat, olive, fresh basil, EVOO, salt and pepper ( easy and delicious ). As for the tomato sauce I cheated by using canned tomatoes, onions, garlic, black pepper, salt and fresh basil. Cook till everything comes together and blitz the sauce for a smoother texture.
