Baked chicken pasta with minestrone soup


Not updating my blog for sometime now. Fear Jean will not add me anymore hahaha....Well one of the reasons was I have been repeating some of the previous food and busy with some other things.

Ok I made these easy baked chicken pasta and minestrone soup today. The baked chicken is super easy yet delicious. Recipe from good food channel uk. Use chicken breast or whole chicken and throw in some fresh rosemary, lemon, garlic, bay leaf and drizzle with some olive oil. The baked till cook. Voila!

Mini quiche

These mini quiches are easy to make and eat too :) this time i added some luncheon ham, garlic sausages, leek, asparagus, onions & some carrots.

Luncheon ham and vegetables fritata

Very ambitious this time bcos it was quite a success making mini fritata earlier. My crust was made using bread... as i am no expert in making pastry crust yet. I made bigger portion, maybe i added too much milk, so my fritata was not up to my liking. The boys loved them... hehehe.. thats the complimentary part..

Oriental tossed noodles

Its been a while since i cooked something new. I created this noodles dish as there are a few packets of nissin noodles in stock which Jaden dislikes. I put in some veg such as cabbage, spring onion, onion, fresh chillies and mushrooms. As for the meat part i opted for smoked pork loin. Also added some chilli flakes for some heat.

Tuna pancake

Since i still have a quarter of the korean pancake mix, i made tuna pancake. Added some shredded carrots, chopped onions and corns into the pancake mix with tuna flakes. Don't forget a dash of pepper.

Jen made 2 loaves of onion bread and volunteered to prepare dinner tonite. On top of the sandwiches that she made, she added a haloumi peaches salad. I made roasted pepper & tomato soup. So here's our dinner tonite:

Bulgur wheat with roasted vegetables salad

Jen bought a packet of bulgur wheat. Had tried it once and quite like the texture. Roasted some veggies and pine nuts  to compliment the wheat, with some vinaigrette drizzle.

"Chicken" Shepherd's Pie

Yoo Hoo! finally the water rationing is off. To celebrate it i made this easy "chicken" shepherd's pie. Boys loved them and they are super easy to make. I followed the recipe by Veronica's kitchen.
