Asian quesadillas - my style !

Made these quesadillas asian style today. Threw in some cabbage,  carrots, celery, leeks and eggs. Add some salt, garlic powder, pepper and cili flakes. Fry the veg first then put a piece of tortilla when the eggs starts to hardened. Then turn over and put cheese and ham or whatever protein of your preference. Put another piece of tortilla on top the ham and cheese then flip again. Dish out when the tortilla surfaces turned brown.
Garnish with mayo and tonkatsu sauce.

Japanese curry with hamburger meat

Boys love Japanese curry and requested for breakfast. The hamburger meat was marinated with salt, sugar, pepper, Worcestershire sauce, thyme, oregano,  coriander, cayenne pepper and olive oil. I served. it with 10 grain rice.

Nutella tart and brownie

As Ryan is quite free now he requested to make this tart by blogger "The Cooking Foodie". Simple tart to make if you are a dessert lover.
Recipe:
For the crust: 24 Oreo cookies 6 tablespoons (90g) Butter, melted For the filling: 1/4 cup (60ml) Heavy cream 4 tablespoons (30g) Cornstarch (corn flour) 3/4 cup + 1 tablespoon (250g) Nutella 1½ cups (360ml) Heavy cream 1/4 teaspoon Salt

He also made these easy Nutella brownies.
Ingredients: 14oz (400g) Nutella, store bought or homemade 2 large eggs + 1 egg yolk 1/3 cup (42g) Flour 1 tablespoon (8g) Cocoa powder 1/4 teaspoon Salt Directions: 1. Preheat oven to 350F (175C). Line the bottom of an 8-inch (20 cm) square baking pan with parchment paper, letting the paper hang over two sides. 2. In a large bowl mix Nutella and eggs, sift in flour, cocoa powder and salt. Stir until incorporated. 3. Pour into prepared dish and smooth top with spatula. 4. Bake for 17-18 minutes, or until a toothpick inserted comes out clean. 5. Let cool before cutting and serving.

Pesto bread rolls

Jaden loves pesto. A neighbour gave mum a lot of coriander, so I made pesto with some almonds, cashews, garlic and olive oil. Since he preferred savoury snacks, made these rolls for his snack in school today.

Kimchi mixed noodles (Bibim guksu) and baked Falafel

Breakfast today I made kimchi mixed noodles (bibim guksu) paired with perfect soft boiled eggs (Hanjuku tamago). I don't have the typical thin noodles, so I used thin udon noodles instead. In addition I garnished with some bacon for the boys. Recipe for the sauce, kimchi, sesame oil, sesame seeds, soy sauce, cili powder, sugar and gochujang.

Second dish for tea today is Falafel. I followed blogger 'The Cooking foodie's" recipe. It should be deep fried but I was lazy so I baked it. Turned out good!
Recipe:
  • 2 cups (400g) dried chickpeas, don’t use canned 
  • 1 small Onion 
  • 3-5 garlic cloves 
  • 1/3 bunch Parsley (omitted)
  • 1/2 bunch Cilantro (added more)
  • Green chilies (my addition)
  • 4 tablespoons (30g) Flour/breadcrumbs or chickpea flour for gluten free version (omitted)
  • 1¼ teaspoon Salt
  • 1/4 teaspoon Pepper 
  • 1 teaspoon Cumin 
  • 1 teaspoon Paprika 
  • 2 teaspoons baking soda
