Bread Toast

My elder sister shared a bread toast recipe with me. I'm an impatient person as I don't like to wait for the proofing process of bread making, that's why I've never attempted to make bread but I love to watch bread making videos... hahaha

So this is the simplest bread making process I can find, with only one proofing. Recipe as follows:
260g bread flour
1tsp (2g) instant yeast
1/2 tsp salt
2 tsp sugar
1 egg with milk 180 g
Knead everything till combined and add 2 tbsp butter at the end to the dough. Proof until dough rise to 90%, then bake at 170 C for about 40 mins.

I added oat and nestum (about 4 tbsp) as I like them.

Mexican Rice & Chicken Do Pyaza

Tried new recipes today. Made Mexican rice, recipe as follows:

Basmati rice, soaked
Capsicum,  carrot, corns, tomatoes
Garlic, ginger, tomato puree and salt;

To accompany the rice I tried chicken do pyaza, by blogger Spice Eats. Recipe as follows

Chicken without skin, marinate with ginger garlic paste, salt and red chili powder
Onions and green chilies  with garlic ginger paste for sautéing.
Yogurt mix with turmeric, chili powder, cumin powder, coriander powder and some garam masala.
Also add deseeded tomatoes, onions petals and chopped coriander towards the end.

Creamy potato and leek pie

Tried this pie found in kitchen flavours, but I alter some of the ingredients. The pie crust is easy and crusty, good to try. Recipe for the crust:

250gm all-purpose flour
1/2 tsp salt
130gm unsalted butter
1 egg

For the filling, I boiled some cubed potatoes, then stir fry my leeks with shopped garlic, onions and some bacon with butter. Added cili flakes, rosemary and chicken granules. When its done mix the potatoes and let it cool.

For the liquid, I used a small cup of yogurt, 2 eggs, black pepper, a pinch of salt n sugar with 2 tbsp of milk.

It's Saturday and the boys normally goes for their taekwondo class. To fill them up I made this teriyaki pork and egg roll donburi with spicy kimchi soup.

Gotcha pork roast

Ryan requested me to make one of his anime food from Shokugeki no Soma (Food Wars) which is gotcha pork roast. 
Quite easy to make with ingredients like boiled potatoes, sautéed onions and mushrooms with butter. Mixed all the ingredients and wrap it with bacon. Tie it with twine and insert some fresh rosemary herbs on the bundle. Bake it at 180C for about 40 mins. For the sauce boiled some red wine with butter. I altered the original recipe by adding some garlic powder and oregano to the potato mixture.

Capsicum rice with grilled spiced chicken

I made this Capsicum rice based on the recipe by Hebar's Kitchen. Recipe as follows:

INGREDIENTS

FOR MASALA POWDER:

  • 2 tbsp peanuts / groundnuts
  • ½ tsp chana dal
  • ½ tsp urad dal
  • 1 tsp coriander seeds
  • ½ tsp cumin seeds / jeera
  • 1 tsp sesame seeds / til
  • 4-5 dried kashmiri red chili

OTHER INGREDIENTS:

  • 2 tbsp oil / ghee
  • 1 tsp mustard seeds / rai
  • few curry leaves / kadi patta
  • 1 medium sized onionthinly sliced
  • 1 cup capsicumgreen, yellow, red, thinly sliced
  • ½ tsp turmeric / haldi
  • ½ tsp garam masala
  • salt to taste
  • 2 cups cooked basmati rice / leftover rice
  • 2 tbsp coriander leavesfinely chopped

INSTRUCTIONS

  • firstly, in a thick bottomed pan dry roast peanuts till the skin separates.
  • further add chana dal, urad dal, coriander seeds, cumin seeds, sesame seeds and red chili.
  • dry roast on low flame till the spices turn aromatic.
  • cool down the spices completely and coarsely powder them. keep aside.
  • in a large kadai heat oil or ghee.
  • further add mustard seeds and curry leaves.
  • saute slightly and allow to splutter.
  • additionally, add onions and saute till they turn slightly golden brown.
  • also saute capsicum.
  • furthermore add turmeric, garam masala, prepared masala powder and salt.
  • saute for a minute or till the spice powder turn aromatic.
  • now add cooked basmati rice or leftover rice.
  • mix gently without breaking rice grains.
  • cover and simmer for 5 minutes or till the rice absorbs the masala.
  • further add coriander leaves and serve.
  • finally, serve capsicum masala rice garnished with few onion slices, lemon and coriander leaves.
    As for the grilled spiced chicken, I used chicken breast marinated with onion powder, garlic powder, cayenne pepper, paprika, ground cumin and coriander, salt and black pepper.
