Tuna and zucchini slice

I love zucchini / courgette so much and can be easily found at Tesco. Recipe below:
  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 3 medium zucchini, coarsely grated
  • 425g can tuna, drained, flaked
  • 1 cup (120g) shredded tasty cheddar (I used cream cheese)
  • 1 cup (135g) gluten-free self-raising flour
  • 1/2 cup (125ml) olive oil, extra
  • 4 Eggs

    Grease and line baking sheet with baking paper. Stir fry the onion and garlic then add them into a bowl with zucchini, tuna, oil, flour and cheese. Mix well and bake at 180 C for about 40 mins or until golden. cool and cut into slices.
